Maison Yams Ube Brownies – Classic (Non-Vegan)

Ingredients
Dry:

  • 1 cup (120g) all-purpose flour
  • 3 tbsp (18g) Maison Yams Ube Powder
  • ½ tsp baking powder
  • ¼ tsp salt

Wet:

  • ½ cup (113g) unsalted butter, melted
  • ¾ cup (150g) white sugar
  • ½ cup (100g) light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup (120ml) whole milk

Optional:

  • ½ cup white chocolate chips
  • Coconut flakes for topping
  • Vanilla icecream

Instructions:

  1. Preheat your oven to 175°C / 350°F. Line an 8x8-inch baking pan with parchment paper or lightly grease it.
  2. In a small bowl, mix the Maison Yams Ube Powder with the milk and let it hydrate for 5 to 10 minutes.
  3. In a large mixing bowl, whisk together the melted butter, white sugar, and brown sugar until smooth.
  4. Add the eggs and vanilla extract, and whisk until fully combined.
  5. Stir in the hydrated ube mixture until evenly incorporated.
  6. In a separate bowl, sift together the flour, baking powder, and salt.
  7. Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  8. If using, fold in the white chocolate chips or sprinkle coconut flakes on top.
  9. Pour the batter into the prepared baking pan and smooth the top.
  10. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  11. Let the brownies cool completely before slicing into squares.

Ingredients:

Dry:

  • 1 cup (120g) all-purpose flour
  • 3 tbsp (18g) Maison Yams Ube Powder
  • ½ tsp baking powder
  • ¼ tsp salt

Wet:

  • ½ cup (120ml) melted coconut oil
  • ¾ cup (150g) cane sugar
  • ½ cup (100g) light brown sugar
  • 2 tbsp ground flaxseed mixed with 6 tbsp water (let sit for 10 minutes)
  • 1 tsp vanilla extract
  • ½ cup (120ml) almond milk or soy milk

Optional:

  • ½ cup vegan white chocolate chips
  • Coconut flakes for topping

  • ¼ tsp salt

Wet:

  • ⅓ cup (80g) tahini
  • ¾ cup (180ml) maple syrup
  • ½ cup (120ml) oat milk
  • 1 tsp vanilla extract
  • 1 tbsp apple cider vinegar

Optional:

  • Dark chocolate chunks
  • Toasted sesame seeds for topping

Instructions

  1. Preheat your oven to 175°C / 350°F. Line an 8x8-inch baking pan with parchment paper or lightly grease it.
  2. In a small bowl, mix the Maison Yams Ube Powder with the oat milk and let it hydrate for 5 to 10 minutes.
  3. In a large mixing bowl, whisk together the tahini and maple syrup until smooth.
  4. Add the vanilla extract and apple cider vinegar, then stir in the hydrated ube-oat milk mixture.
  5. In a separate bowl, sift together the flour, baking powder, and salt.
  6. Fold the dry ingredients into the wet mixture gently until fully combined.
  7. If using, fold in dark chocolate chunks or sprinkle toasted sesame seeds on top.
  8. Pour the batter into the prepared baking pan and smooth the top.
  9. Bake for 25 to 28 minutes, or until the edges are firm and the center is just set.
