

Maison Yams Brownies
Maison Yams Ube Brownies – Classic (Non-Vegan)
Ingredients
Dry:
- 1 cup (120g) all-purpose flour
- 3 tbsp (18g) Maison Yams Ube Powder
- ½ tsp baking powder
- ¼ tsp salt
Wet:
- ½ cup (113g) unsalted butter, melted
- ¾ cup (150g) white sugar
- ½ cup (100g) light brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup (120ml) whole milk
Optional:
- ½ cup white chocolate chips
- Coconut flakes for topping
- Vanilla icecream
Instructions:
- Preheat your oven to 175°C / 350°F. Line an 8x8-inch baking pan with parchment paper or lightly grease it.
- In a small bowl, mix the Maison Yams Ube Powder with the milk and let it hydrate for 5 to 10 minutes.
- In a large mixing bowl, whisk together the melted butter, white sugar, and brown sugar until smooth.
- Add the eggs and vanilla extract, and whisk until fully combined.
- Stir in the hydrated ube mixture until evenly incorporated.
- In a separate bowl, sift together the flour, baking powder, and salt.
- Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix.
- If using, fold in the white chocolate chips or sprinkle coconut flakes on top.
- Pour the batter into the prepared baking pan and smooth the top.
- Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Let the brownies cool completely before slicing into squares.

Ingredients:
Dry:
- 1 cup (120g) all-purpose flour
- 3 tbsp (18g) Maison Yams Ube Powder
- ½ tsp baking powder
- ¼ tsp salt
Wet:
- ½ cup (120ml) melted coconut oil
- ¾ cup (150g) cane sugar
- ½ cup (100g) light brown sugar
- 2 tbsp ground flaxseed mixed with 6 tbsp water (let sit for 10 minutes)
- 1 tsp vanilla extract
- ½ cup (120ml) almond milk or soy milk
Optional:
- ½ cup vegan white chocolate chips
- Coconut flakes for topping

- ½ tsp baking powder
- ¼ tsp salt
Wet:
- ⅓ cup (80g) tahini
- ¾ cup (180ml) maple syrup
- ½ cup (120ml) oat milk
- 1 tsp vanilla extract
- 1 tbsp apple cider vinegar
Optional:
- Dark chocolate chunks
- Toasted sesame seeds for topping
Instructions
- Preheat your oven to 175°C / 350°F. Line an 8x8-inch baking pan with parchment paper or lightly grease it.
- In a small bowl, mix the Maison Yams Ube Powder with the oat milk and let it hydrate for 5 to 10 minutes.
- In a large mixing bowl, whisk together the tahini and maple syrup until smooth.
- Add the vanilla extract and apple cider vinegar, then stir in the hydrated ube-oat milk mixture.
- In a separate bowl, sift together the flour, baking powder, and salt.
- Fold the dry ingredients into the wet mixture gently until fully combined.
- If using, fold in dark chocolate chunks or sprinkle toasted sesame seeds on top.
- Pour the batter into the prepared baking pan and smooth the top.
- Bake for 25 to 28 minutes, or until the edges are firm and the center is just set.
